Extra Virgin Olive Oil Cookies

Delicious, light and crumbly biscuits to be enjoyed both for breakfast and for a snack. For this easy recipe, we recommend using our BLEND organic extra virgin olive oil.

Preparation: 20 minutes + 30 minutes of dough rest time
Cooking: 10 minutes
Servings: 35/40 biscuits


  • 250 g all-purpose flour
  • 120 g sugar (brown sugar can be used)
  • 80 ml extra virgin olive oil
  • 1 medium egg
  • 1 teaspoon of yeast
  • Zest of one lemon
  • 1 drop of vanilla essence
  • Icing sugar


Beat the egg with the sugar until a frothy cream is obtained. Add the flour and baking powder. Mix until ingredients are well blended.

Add the grated lemon peel and the oil.
Work the dough with your hands until you get a smooth, soft and homogeneous dough that you will wrap in a transparent film and then put it in the fridge for about 30 minutes.

Once cooled, roll out the dough until it is half a centimeter thick and form the biscuits with molds.
Place the biscuits on a baking tray covered with parchment paper and bake in a preheated oven at 180 degrees for about 10 minutes until lightly browned.

Once cooked, allow the biscuits to cool completely and sprinkle with icing sugar.
Store them in an airtight container.
